Our red wines and their journey into the bottle

The red wines undergo primary storage in stainless steel tanks. The temperature is raised during the first few days to initiate malolactic fermentation. Afterwards, the wines are transferred to their respective wooden barrels for aging.

Red wines from the Classic line are aged in large wooden barrels to ensure optimal maturation. This results in fruity, full-bodied wines that are typical of the grape variety.

Red wines of select quality are placed in barrique barrels to mature into very age-worthy and full-bodied wines with a pronounced tannin structure.

This is how our white wines mature

Classic white wines are stored on the fine lees in stainless steel containers after fermentation to achieve maximum fruitiness and elegance.

Powerful single-vineyard white wines mature in large wooden barrels on the fine lees to become complex, dense and very age-worthy wines.

While our best wines thrive on the slopes of the Mount of Olives, the
Processing and storage facility for grapes and wines at the foot of the mountain
built into the hillside.
